Why we don’t bleach our almonds

Walk down any dry-fruit aisle and the almonds look identical: pale, glossy, uniform. That uniformity is manufactured. Commodity almonds are often bleached and polished to look “premium.”

Real almonds aren’t uniform. Kashmiri Mamra almonds are darker, more irregular, higher in oil — and they taste of something. We sort by hand and pack them exactly as they grew. If a batch looks a little rustic, that’s the point.
